My Postpartum Apple Pie Cookies 🍎

Ingredients:

Apple Pie Filling

• 4 green apples, peeled and diced

• 2 tbsp cane sugar

• 4 tbsp dark brown sugar

• 1 tbsp freshly squeezed lemon juice

• 1 ½ tbsp coconut oil

• 2 tsp ground cinnamon

• 1 ½ tsp arrowroot starch

• 1 tbsp water

• 1 tsp pure vanilla extract

Coconut Caramel Sauce

• ½ cup cane sugar

• ¼ cup water

• ½ cup full-fat coconut cream

• 1 tbsp coconut oil

• ¼ tsp sea salt

Cookie Base

• 1 ¼ cups blanched almond flour

• 1 cup tapioca flour (Bob’s Red Mill is my favorite)

• 2 tsp ground cinnamon, plus ½ tsp more for rolling

• ¼ tsp sea salt

• ½ cup (8 tbsp) coconut oil, solid from fridge

• ¼ cup + 2 tbsp cane sugar (78 g), plus ¼ cup more for rolling

• 1 tsp pure vanilla extract

• 1 tsp almond extract

Instructions

Step 1: Make the Apple Pie Filling

1. Warm coconut oil in a skillet over medium heat.

2. Add apples, cane sugar, brown sugar, lemon juice, and cinnamon. Cook until softened, about 8–10 minutes.

3. Stir in arrowroot starch mixed with water to thicken.

4. Remove from heat and stir in vanilla extract. Let cool.

Step 2: Make the Coconut Caramel Sauce

1. In a small saucepan, heat cane sugar and water over medium heat until sugar dissolves and turns golden.

2. Slowly whisk in coconut cream — it will bubble!

3. Stir in coconut oil and sea salt. Cook 2–3 minutes until smooth. Set aside.

Step 3: Make the Cookie Dough

1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment.

2. In a medium bowl, whisk almond flour, tapioca flour, cinnamon, and salt.

3. In a separate bowl, beat solid coconut oil and cane sugar until fluffy. Add vanilla and almond extracts.

4. Mix wet into dry until a soft dough forms.

Step 4: Assemble & Bake

1. Scoop dough into small balls. Roll in cinnamon-sugar mixture.

2. Place on baking sheet and press a thumbprint into the center of each.

3. Fill each indentation with a spoonful of apple filling.

4. Bake 15–18 minutes, until edges are lightly golden.

5. Cool slightly, then drizzle with coconut caramel sauce.
