🍂 Spiced Pumpkin Gummies Recipe

Yield: Approximately 30–40 gummies

Depending on the size of your molds

Prep Time: 10 minutes

Cook Time: 5–10 minutes

Chill Time: 2–3 hours

Total Time: About 2½–3½ hours


🧺 Ingredients

• 1 cup coconut milk

• 1½ cups pumpkin puree

• ¼–⅓ cup maple syrup

• ¼ cup grass-fed gelatin

• 1 teaspoon cinnamon

• ½ teaspoon ginger

• ½ teaspoon nutmeg

• ½ teaspoon allspice

• ½ teaspoon cloves

• Dash of sea salt

• 1 teaspoon vanilla extract


How to Make Them

1. Warm your ingredients

Add the coconut milk, pumpkin puree, maple syrup, cinnamon, ginger, nutmeg, allspice, cloves, and sea salt to a saucepan. Warm gently over low to medium heat, stirring until everything is beautifully combined. Do not boil.

2. Add the gelatin

Remove from the heat and gradually sprinkle in the gelatin while whisking continuously. Keep whisking until completely dissolved and smooth.

3. Add vanilla

Stir in the vanilla extract.

4. Fill your molds

Pour the mixture into silicone molds. I love using little seasonal shapes because it makes these extra fun. 🤎
5. Chill

Place in the refrigerator for 2–3 hours, or until completely firm.

6. Enjoy!

Pop them out of the molds and enjoy! Store in an airtight container in the refrigerator for approximately 5–7 days.
