Creamy Mushroom Chicken Soup

• 1 rotisserie chicken, shredded
• 8 oz mushrooms, sliced
• 3 carrots, sliced
• 3 celery stalks, chopped
• 4 cloves garlic, minced
• 4 cups chicken bone broth
• 1 cup full-fat coconut milk
• 1 tsp thyme
• 1 tsp rosemary
• 1 tsp garlic powder
• ¼ cup coconut aminos
• Sea salt and pepper, to taste
Instructions
1️⃣ Sauté the aromatics:
In a large pot, heat a drizzle of olive oil over medium heat. Add carrots, celery, and garlic. Sauté for 5–7 minutes until softened and fragrant.
2️⃣ Add mushrooms:
Stir in mushrooms and cook until they release their moisture and begin to brown.

Add thyme, rosemary, garlic powder, salt, and pepper. Stir in bone broth and coconut aminos. Bring to a gentle boil, then reduce to low and simmer for 20 minutes.
