Meal Planning for Postpartum: Grounding Carrot Ginger Sweet Potato Soup

There’s something about a simple bowl of soup that can instantly make you feel nourished, cozy, and cared for, especially during the cooler autumn months or while supporting your body postpartum.

This Grounding Carrot Ginger Sweet Potato Soup is exactly that kind of bowl. Sweet potatoes and carrots bring natural sweetness and gentle warmth, while fresh ginger adds a soothing, restorative touch. Coconut milk and coconut aminos create a creamy, comforting base that is both rich in flavor and gentle on digestion.

It’s easy to make, deeply satisfying, and perfect for meal prep, slow evenings, or any time you want a grounding, healing meal.

Ingredients 🌿

• 3 medium sweet potatoes, peeled and diced

• 3 medium carrots, peeled and chopped

• 3 cloves garlic, minced

• 4 cups chicken bone broth

• 1 can full-fat coconut milk

• 1 tbsp fresh grated ginger

• ¼ cup coconut aminos

• 2 tsp garlic powder

• Sea salt & pepper, to taste

Instructions 🍵

1️⃣ In a large pot, combine the sweet potatoes, carrots, garlic, fresh ginger, and chicken bone broth. Bring to a boil, then reduce heat and simmer until the vegetables are tender, about 20–25 minutes.

2️⃣ Blend the soup until smooth using an immersion blender, or carefully transfer to a blender.

3️⃣ Return the blended soup to the pot and stir in coconut milk, coconut aminos, garlic powder, and salt and pepper.

4️⃣ Simmer for a few more minutes until heated through.

5️⃣ Serve warm. Optional: drizzle with olive oil or garnish with fresh herbs for an extra cozy touch.
