Start Postpartum Meal Prepping Today: Roasted Herb Garden Tomato Soup

I have officially called this week soup week. Now is the time for us to fill our freezers with all the nourishing soups for the colder months ahead. If you are preparing for postpartum nourishment, this soup week is for you!

This SOUP feels like THE ULTIMATE RAINY DAY SOUP — sweet cherry tomatoes roasted until caramelized, blended with basil, and simmered with a bundle of rosemary and thyme. It’s simple, full of flavor, and deeply comforting.

Ingredients

• 2 lb cherry tomatoes

• 6 garlic cloves, peeled

• ¼ cup extra virgin olive oil

• Sea salt and pepper, to taste

• ½ cup fresh basil, packed

• 1 cup homemade chicken bone broth

• ½ cup full-fat coconut milk

• Fresh rosemary and thyme sprigs, bundled with kitchen twine

Instructions

1. Roast the tomatoes:

Preheat the oven to 400°F. Spread cherry tomatoes and garlic on a baking sheet, drizzle with olive oil, and season with sea salt and pepper. Roast for 25–30 minutes, until the tomatoes are blistered and fragrant.

2. Blend:

Transfer the roasted tomatoes and garlic (including their juices) to a blender. Add fresh basil and blend until smooth.

3. Simmer with herbs:

Pour the mixture into a pot over medium heat and stir in the chicken bone broth. Add the herb bundle and let the soup simmer for 10–15 minutes, allowing the flavors to infuse.

4. Finish with coconut milk:

Remove the herb bundle and stir in the full-fat coconut milk. Taste and adjust seasoning.

5. Serve warm:

Ladle into bowls and top with a drizzle of olive oil or a sprinkle of fresh basil.
