Ingredients

• ½ cup goat or cow’s milk
• 2 tsp apple cider vinegar
• 2 tbsp melted coconut oil or butter
• ½ cup maple syrup
• 1 flax egg (1 tbsp ground flaxseed + 3 tbsp water, set 5 min)
• 1 tsp almond extract
• 3 tbsp blueberry juice
• 1 cup fresh wild blueberries
Directions:
1. Preheat & Prep: Heat oven to 350°F. Line a 12-cup muffin tin with paper liners or lightly grease.
2. Flax Egg: Mix flaxseed + water, set 5–10 minutes to thicken.
3. Dry Ingredients: Whisk together oat flour, almond flour, baking soda, baking powder, salt, cinnamon, and brown sugar.
4. Wet Ingredients: Whisk milk, apple cider vinegar, coconut oil, maple syrup, almond extract, blueberry juice, and flax egg until smooth.
5. Combine: Stir wet into dry ingredients until just combined. Gently fold in blueberries.
6. Bake: Divide batter evenly, filling cups ¾ full. Bake 18–25 min or until golden and a toothpick comes out clean.
7. Cool & Serve: Let cool 5 min, then transfer to a wire rack. Serve warm with honey or butter.
