🍎 Ingredients

Crust

• 1 cup almond flour

• 1 tbsp coconut oil

• 1 tsp ground cinnamon

• Pinch of sea salt

• 7 large Medjool dates, soaked & pitted

• 1 tbsp almond butter

• ¼ cup crushed raw walnuts

Filling

• 1 apple, thinly sliced

• 1 pear, thinly sliced

• 1 tbsp raw honey

• 1 tsp ground cinnamon

• Juice of ½ lemon

• ¼ tsp ground nutmeg

🥣 Instructions

1. Make the crust

Soak dates in warm water for 10–15 minutes, then drain.

In a food processor, blend almond flour, coconut oil, cinnamon, sea salt, dates, almond butter, and crushed walnuts until the mixture holds together when pressed.

Press small spoonfuls of the crust into star-shaped silicone molds to form mini pie shells. Chill in the fridge or freezer while preparing the filling.

2. Prepare the filling

In a bowl, combine sliced apple and pear with honey, cinnamon, lemon juice, and nutmeg. Gently toss until evenly coated. Let sit for a few minutes to soften and release flavor.

3. Assemble the stars

Spoon the fruit mixture into each chilled crust, gently pressing to help it hold shape.

4. Chill & serve

Refrigerate for at least 1 hour to set. Pop them out of the molds when firm, and enjoy chilled or at room temperature.
